Oasis Bakery

Baked through the night, sold through the day

The bakery runs the classical three-part kitchen: the breakfast pastries, the bread, and the patisserie counter. It keeps its own entrance from the road, so you do not have to be a guest to use it.

Viennoiserie

The breakfast pastries, laminated in-house.

  • Butter croissantFolded over three days, baked to an open honeycomb and a shell that goes everywhere when you tear it.
  • Pain au chocolatThe same dough, wrapped around two batons of dark chocolate.
  • Danish pastriesRaspberry, apricot glaze or vanilla custard, depending on the morning.
  • Apple briocheEnriched dough, heavy on egg and butter, crowned with caramelised apple.

Boulangerie

Bread, slow-fermented and baked twice a day.

  • Traditional baguetteBlistered crust, open crumb, and a shelf life of about four hours — which is the point.
  • Wild yeast sourdoughFrom a starter the kitchen keeps alive itself. Tangy, slow, worth the wait.
  • Multigrain and wholemealOats, sunflower, cracked wheat and flaxseed in a dense hearth loaf.
  • Brioche and dinner rollsMilk, butter and a glaze, sent out warm alongside dinner.

Pâtisserie

The counter, and the cakes ordered weeks ahead.

  • MacaronsAlmond shells with ganache or buttercream, in whatever the kitchen is running that week.
  • ÉclairsChoux, pastry cream, and a glaze that still shines by the afternoon.
  • Cakes and tartsBlack forest, baked cheesecake and lemon tart on the counter; anything else with a week's notice.
  • Petit fours and quichesOne bite each — sweet at one end of the counter, savoury at the other.
